Cider Sangria

In a 2-qt. pitcher, stir together:

4 cups apple cider

2 cups pineapple juice

the juice of 3 oranges

1 sliced orange

1 sliced Granny Smith apple

1 sliced Bosc pear

3 cinnamon sticks

Pour 4 cups of the mixture, including half of the fruit, into another 2-qt. pitcher. In one pitcher, stir in 5 cups (1 1/2 bottles) dry white wine, 1/4 cup brandy, and 1/4 cup agave syrup, then label accordingly. Refrigerate both pitchers overnight. Just before serving, stir 5 cups chilled lemon-lime soda into the nonalcoholic pitcher. Serve chilled over ice. Makes 10 cocktails and 10 mocktails.

Pink Guava Punch

In a 2-qt.pitcher, stir together:

4 cups guava nectar

2 cups pineapple juice

6 Tbs. frozen pink-lemonade concentrate

Pour 3 cups of the mixture into another 2-qt. pitcher. Chill until serving. Just before serving, slice 1 1/2 cups strawberries and 1 star fruit. Add half of the fruit to each pitcher. Gently stir a 1-liter bottle of chilled plain seltzer into one of the pitchers. Stir 1 bottle chilled prosecco and 2 cups chilled ginger ale into the remaining pitcher and label accordingly. Serve chilled over ice. Makes 10 cocktails and 9 mocktails.

Yuletide Mule

In a 2-qt. pitcher, combine:

4 cups limeade

2 cups unsweetened pomegranate juice

1 1/2 cups unsweetened cranberry juice

1/4 cup honey

the juice from 2 limes

Stir until the honey is dissolved. Pour 4 cups of the mixture into another 2-qt. pitcher. Chill until ready to serve. Just before serving, gently stir 1 sliced lime, 1/2 cup pomegranate seeds, and 2 chilled 12-oz. bottles of ginger beer into each pitcher. Add 1 cup vodka to one of the pitchers and label accordingly. Serve chilled over ice. Makes 10 cocktails and 9 mocktails.

Cranberry Sparkler

In a punch bowl, mix together:

1 bottle (64 oz.) cranberry juice cocktail

1 bottle (24 oz.) sparkling cider

1 liter ginger ale

Juice from half an orange.

For garnish, place 2-1/2 cups raspberries in a gelatin ring mold; cover berries with juice or water; freeze. Add to bowl with orange slices.

Citrus Punch

Simmer 1/2 cup sugar and 1/2 cup water until dissolved. Let cool. Add to punch bowl with:

1 qt. orange juice

2 cups pink grapefruit juice

1/2 cup fresh lemon juice

1/4 cup fresh lime juice

1 liter seltzer

Refrigerate. For garnish, layer citrus slices in a round cake pan; cover fruit with juice or water and freeze.

Starlight Punch

Simmer together:

1 cup water

1 cup sugar

1 slice ginger

1 tsp. cloves

3 cinnamon sticks

2 star anise

Cool, then strain. In a punch bowl, mix:

1 bottle (64 oz.) white-grape juice

1 bottle (24 oz.) sparkling cider

1 liter seltzer

1/2 cup reserved spiced syrup

Garnish with sliced star fruit, kiwi, and grapes.
