Sweet, crunchy watermelon is the perfect addition to a colorful Greek salad. We guarantee this summery side will be a hit at your next cook-out, potluck, or block party.
2 medium to large ripe tomatoes, cut into chunks
2 cups watermelon cubes
1 English cucumber, halved, seeded, and sliced into half-moons
1 orange bell pepper, cut into chunks
½ cup pitted kalamata olives
¼ cup red onion slices
3 Tbs. olive oil
1 Tbs. red wine vinegar
½ tsp. dried oregano
½ tsp. salt
Freshly ground black pepper to taste
3/4 cup cubed feta cheese
Combine all of the ingredients except the feta in a large bowl. Stir gently to combine. Add the feta and stir again.
Feel free to omit any ingredients your family doesn't like, or serve the olives, for example, on the side. For another refreshing variation, sub in peach chunks for the watermelon.
