This cut of steak is extremely flexible -- you can just season it with salt and pepper and throw it on the grill, or get a little more ambitious by spicing it up to suit your family's tastes.
Dress the steak with this tasty salsa: tomatillos with garlic, shallot, cilantro, lime juice and jalape?o chili pepper.
For a healthier fry, cut sweet potatoes into wedges and toss them with olive oil, salt and pepper. Bake until golden brown and tender.
Serve the steak in tortillas, topped with tomato, lettuce, avocado, and a dollop of plain yogurt or light sour cream.
While the steak cooks, add your choice of greens -- I recommend spinach, arugula or watercress -- to a skillet over medium-high heat. Then serve them on the side.
