Moo-Shu Pork Roll-Ups

We simplified this Chinese favorite by rolling its sweet filling inside a sturdy flour tortilla instead of a traditional pancake. Moo-Shu Pork filling typically includes wood ear mushrooms, named for how they look growing on the sides of trees. We used easier-to-find shiitakes.

Curried Chicken Kati Rolls

The Kati Roll is India's answer to the burrito. Ours is filled with tender slices of chicken that have been marinated overnight, grilled onions, and a sweet, mango chutney-inspired sauce. Don't be deterred by the exotic-sounding ingredient garam masala: you can find it in the spice aisle of most major supermarkets.

Spanakopadillas
