1. Preheat oven to 425 degrees F. Spray four 6-inch by 2-inch loaf pans with oil; set aside. In a medium bowl, combine flour, cornmeal, sugar, baking powder, and salt. Blend well. Stir in milk, oil, eggs, and vegetables.
2. Spoon the mixture into prepared loaf pans and bake for 20 to 25 minutes, until golden brown and a toothpick inserted in the center comes out clean. Cool loaves in the pans for 5 minutes, then transfer to baking racks to cool completely. Each loaf makes about 8 slices.
