  • Preheat oven to 425 degrees F. Spray four 6-inch by 2-inch loaf pans with oil; set aside. In a medium bowl, combine flour, cornmeal, sugar, baking powder, and salt. Blend well. Stir in milk, oil, eggs, and vegetables.

  • Spoon the mixture into prepared loaf pans and bake for 20 to 25 minutes, until golden brown and a toothpick inserted in the center comes out clean. Cool loaves in the pans for 5 minutes, then transfer to baking racks to cool completely. Each loaf makes about 8 slices.
