Viennese Cucumber Salad


  • 3 cucumbers
  • Salt
  • Pepper
  • 3 parts olive oil
  • 2 parts apple cider vinegar

Make It

1. Peel cucumbers. Using a mandolin, thinly slice cucumbers into wooden or stainless-steel bowl (not plastic). Cover in salt, toss (repeat twice). Cover in salt one last time, then sprinkle with pepper, cover the bowl and let the cucumber sweat. After 45 minutes, add oil and vinegar to taste.


  • One of the keys is to find the right cucumbers. The greener the better. The salt brings out the cucumber juice which mixes with the olive and vinegar to make it truly delicious.
