  • Heat canola oil in a large saucepan over medium-high. Add onion. Cook, stirring occasionally, until softened, about 4 minutes. Add chipotle and cumin. Cook, stirring constantly, until fragrant, about 1 minute. Add vegetable broth, tomatoes, hominy, beans, and salt. Bring to a boil. Reduce heat to medium to maintain a simmer. Let simmer 10 minutes.

  • Add zucchini and simmer until tender, about 3 minutes. Ladle into bowls and top each serving with a dollop of sour cream.


Serve with toppings such as lime wedges, jicama matchsticks, shredded cheese, crushed tortilla chips, and thinly sliced cabbage and radishes.
