Ingredients

  • 2 tablespoons butter
  • 3 cloves garlic, chopped
  • 1 1/2 cups diced onion
  • 2 1/2 pounds zucchini, scrubbed and cut into 1/4-inch thick slices)
  • 2 teaspoons dried basil leaves
  • 1 large tomato, seeded and diced
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

Make It

1. Heat butter in large nonstick skillet over medium heat. Add garlic and onion; saute until softened, about 5 minutes.

2. Stir in zucchini and basil; cook, covered, 12 minutes, stirring often. Add tomato, salt and pepper; cook, stirring, 3 minutes. Makes 6 servings.
