Ingredients

  • 2 tablespoons butter
  • 2 cloves garlic, chopped
  • 1 rib celery, diced
  • 2 carrots, diced
  • 1/4 pound chopped mushrooms
  • 1 box (6.09-ounce) rice pilaf mix, with seasoning packet
  • 2 cups water
  • 1/4 teaspoon pepper
  • 1 can white beans, drained
  • Sliced green onions, for garnish

Make It

1. Heat butter in a medium-size saucepan over medium heat. Add garlic, celery, carrots and mushrooms; cook 5 minutes.

2. Add rice pilaf mix with seasoning packet, water and pepper. Bring to a boil. Reduce heat and simmer, covered, for 17 to 22 minutes, until rice is tender. Add white beans. Garnish with sliced green onions. Makes 4 servings.
