Sweet-Potato Quick Bread

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups sugar
  • 1 can (15.75 ounces) sweet potatoes in heavy syrup
  • 1/4 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup chopped toasted walnuts
  • 1/2 cup raisins

Make It

1. Heat oven to 350 degrees F. Butter and flour a 9 x 5-inch loaf pan. In medium bowl, sift all-purpose flour, ground cinnamon, baking soda, baking powder, and salt.

2. In large bowl, blend sugar; sweet potatoes, drained and mashed; vegetable oil; eggs; and vanilla extract. Stir in dry ingredients, walnuts, and raisins. Transfer batter to pan and bake about 1 hour.
