Sweet Potato Pudding

  • Canola oil spray
  • 2 pounds sweet potatoes (4 medium), baked until soft (about 1 hour) and peeled
  • 3 eggs, lightly beaten
  • 1/4 cup light brown sugar
  • 1/4 cup 1% milk
  • 1 tablespoon flour
  • 1/2 teaspoon cinnamon

Make It

1. Heat oven to 350 degree F. Spray the inside of eight 1/2-cup ramekins with canola oil.

2. In a large mixing bowl, combine remaining ingredients. Blend with an electric mixer until smooth.

3. Divide the mixture evenly into the prepared ramekins. Place on a baking tray, and bake until set in the middle, about 20-25 minutes. (The tops should be starting to brown, and the pudding should be pulling away from the sides of the dishes.) Serve warm.
