Heat oven to 350 degree F. Spray the inside of eight 1/2-cup ramekins with canola oil.
In a large mixing bowl, combine remaining ingredients. Blend with an electric mixer until smooth.
Divide the mixture evenly into the prepared ramekins. Place on a baking tray, and bake until set in the middle, about 20-25 minutes. (The tops should be starting to brown, and the pudding should be pulling away from the sides of the dishes.) Serve warm.
