Squash-and-Apple Gratin

Ingredients

  • 1 3 pound (large) butternut squash, peeled and cut into 1-inch cubes
  • 2 Golden Delicious apples, peeled, cored, and cut into 1/2-inch cubes
  • 2 garlic cloves, minced
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon chopped fresh thyme
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup all-purpose flour
  • 1/4 cup olive oil

Make It

1. Heat oven to 375 degrees F. Spray shallow casserole dish with vegetable cooking spray. In large bowl, toss together squash, apple, garlic, parsley, thyme, salt, pepper, and flour.

2. Transfer mixture to prepared casserole dish, and drizzle olive oil over top. Bake 1 hour and 45 minutes.
