Ingredients

  • 2 1/2 pounds golden potatoes (unpeeled and scrubbed)
  • 1 orange pepper
  • 1 red pepper
  • 1 yellow sweet pepper
  • 2 tablespoons olive oil
  • 2 teaspoons (1.25-ounces packet) taco seasoning
  • 1 teaspoon oregano

Make It

1. Heat oven to 400 degrees F. Cut golden potatoes (unpeeled and scrubbed) into 1-inch pieces. Toss in a large bowl with peppers, cored and cut into pieces, olive oil, taco seasoning and oregano. Spread onto large rimmed baking sheet. Roast at 400 degrees F for 35 minutes, until tender.
