Pumpkin-Peanut Butter Soup

Ingredients

  • 1/2 cup chopped onion
  • 1 tablespoon olive oil
  • 1 15 ounce can pumpkin puree
  • 2 cups low-sodium chicken broth
  • 1 cup water
  • 1/4 cup peanut butter
  • 1/4 teaspoon curry powder
  • 1/4 teaspoon salt
  • Plain yogurt

Make It

1. Cook onion in hot olive oil on medium heat for 4 minutes, or until tender. Stir in pumpkin puree, low-sodium chicken broth, water, peanut butter, curry powder, and salt; heat through. Swirl plain yogurt on top of each bowl.
