Potatoes Roasted With Capers And Tomatoes

Ingredients

  • 3 1/2 pounds red new potatoes, with skins, cut into 3/4-inch chunks
  • 2 cloves garlic, finely chopped
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil
  • 1 small onion, finely chopped
  • 2 cans (14 ounces each) diced tomatoes in juice, drained
  • 1/4 cup capers

Make It

1. Heat oven to 425 degrees F.

2. Toss together potatoes, garlic, salt, pepper and olive oil in a large bowl to coat the potatoes evenly with the oil and seasonings.

3. Spread the chopped onion and diced tomatoes over the bottom of a large roasting pan. Distribute the potatoes evenly over the top of onions and tomatoes in the pan.

4. Roast in 425 degree F oven for about 40 minutes or until the potatoes are almost fork-tender, stirring the mixture 2 or 3 times with a wooden spoon during the cooking.

5. Sprinkle the capers evenly over top of the potatoes. Roast the whole mixture in the 425 degree F oven for an additional 15 minutes or until the potatoes are fork-tender. Makes 8 servings.
