PEPPER, ONION, MUSHROOM PIZZA

Ingredients

  • 1 cup sliced sweet green peppers
  • 1 cup sliced red or yellow onion
  • 1 teaspoon tomato paste
  • 2 teaspoons chopped fresh sage OR: 3/4 teaspoon dried (optional)
  • 1/2 teaspoon dried leaf basil
  • 1/2 teaspoon dried leaf oregano
  • 1 package (10 ounces) refrigerated pizza dough
  • 1 1/2 cups shredded part-skim-milk mozzarella cheese (6 ounces)
  • 1 cup sliced mushrooms
  • 2 tablespoons grated Parmesan cheese

Make It

1. Combine peppers, onion, tomato sauce, sage if using, basil and oregano in skillet. Simmer, covered, 5 minutes. Uncover; cook 3 minutes until sauce is thickened. Cool.

2. Coat 12-inch pizza pan with cooking spray. Roll dough out to 13-inch circle on floured surface. Fit into prepared pizza pan.

3. Bake crust in preheated 450 degree F oven 10 minutes. Spread sauce mixture evenly over top, leaving 1-inch border. Sprinkle on mozzarella, mushrooms and Parmesan. Return pizza to oven. Bake 12 minutes until golden. Cool 10 minutes. Makes 4 servings.
