Pepper-jackmashed Potatoes

Ingredients

  • 2 1/2 pounds Yukon Gold potatoes, with skins, scrubbed and coarsely chopped
  • 1/2 cup milk
  • 1/4 cup (1/2 stick) unsaltedbutter
  • 1 cup shredded pepper-Jack cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Make It

1. Bring a large pot of salted water to boiling. Add potatoes; cook for 20 minutes or until fork-tender. Drain and return to pot.

2. Add milk and butter to potatoes. Mash potatoes, leaving lumps if desired. Add pepper-Jack cheese, salt and pepper, blending well. Makes 8 servings.
