Ingredients

  • 2 1/2 pounds unpeeled potatoes
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 2 tablespoons chopped parsley

Make It

1. Cut potatoes into 1-inch pieces; cook in lightly salted water for 15 minutes, until tender. Drain.

2. Smash with a potato masher and gradually beat in olive oil. Season with salt and each pepper and nutmeg. Stir in chopped parsley.
