Mario Batali's Broccoli

  • 3 pounds broccoli
  • 6 tablespoons extra-virgin olive oil
  • 4 cloves garlic, thinly sliced
  • 1 cup dry white wine
  • 1 tablespoon hot red-pepper flakes
  • grated zest of 1 lemon
  • grated zest of 1 orange

Make It

1. Cut broccoli into spears. Heat olive oil and garlic in a large saute pan over medium-high heat until sizzling. Add broccoli and cook, tossing frequently and gradually adding wine to keep garlic from browning. Cook until tender, 8 to 10 minutes. Add hot red-pepper flakes and grated lemon and orange zest. Toss gently.
