1. Heat oven to 425 degrees F. Lightly spray a nonstick baking sheet with oil.
2. Cut potato lengthwise into 1/2-inch-thick slices. Cut each slice lengthwise into 1/2-inch-strips.
3. Arrange strips on prepared baking sheet; spray with oil.
4. Combine salt, pepper, and paprika in small cup; sprinkle half the mixture over strips. Bake 7 to 8 minutes, until lightly browned. Flip with spatula and sprinkle with remaining spice mixture. Bake 7 to 8 minutes more, until browned and tender.
