Cheesy Ranch With Veggies:

1. In a bowl, combine 1/2 cup cottage cheese with 2 tablespoons ranch dressing. Pack and serve with carrot sticks, cucumber slices, red- and yellow-pepper slices, halved cherry tomatoes, and breadsticks.

Nice and Nutty:

2. In a bowl, combine 1/4 cup peanut butter and 1/4 cup apple juice. Pack and serve with celery sticks, apple slices, strawberry slices, and multigrain crackers.

Portable Pizza:

3. Pack a small container (about 1/3 cup) of pizza sauce. Serve with a cheese stick, whole-grain crackers, pepperoni slices, and broccoli florets.

Star Power:

4. Mix together 1 can light tuna, drained; 1 small carrot, peeled and grated; 2 tablespoons mayonnaise; and 1/2 teaspoon lemon juice. Cut fun shapes out of whole-wheat bread using cookie cutters, and fill with tuna salad.

Sushi Sandwich:

5. Trim the crust from 1 slice of firm bread. Place a cheese stick on the edge of the bread and roll up. Place 1 slice of ham on top of another slice, and put the bread roll on a short edge of the ham. Roll up the bread roll inside the ham. Cut into 6 pieces.

Wacky Waffle:

6. Place a slice of cheese between 2 slices of firm bread. Spray the sandwich with cooking spray, and place in a heated waffle iron.

Turkey Chili:

7. This protein-packed lunch will keep your kids fueled for the rest of the day. We sweetened it up naturally with carrots and red peppers.

Very Veggie Mac and Cheese:

8. For convenience, we stirred in cooked frozen mixed veggies, but any favorite leftover vegetable will do.

Chicken-and-Stars Soup:

9. A healthy, easy-to-make cup of soup that will have your kids slurping up every last drop. If star-shaped pasta is hard to find, you can substitute any tiny-size noodles, like ditalini, orzo, or rings.
