Healthy Scalloped Potatoes

Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons flour
  • 1 cup fat-free half-and-half
  • 3/4 cup 2% milk
  • 3 garlic cloves, chopped
  • 3/4 teaspoon salt
  • 1/8 teaspoon dried thyme
  • 1 1/2 pounds thinly sliced baking potatoes

Make It

1. Heat olive oil in a large saucepan over medium heat. Whisk in flour; cook 1 minute.

2. Whisk in half-and-half, 2 percent milk, garlic, salt and dried thyme. Add potatoes and bring to simmer. Cook 1 minute.

3. Spoon into greased 8 x 8 x 2-inch baking dish and cover with foil. Bake at 375 degrees F for 40 minutes. Uncover and bake additional 10 minutes. Cool slightly. Garnish with chopped parsley.
