Grilled Corn with Chili Butter

  • 4 tablespoons softened butter
  • Juice of 1 lime
  • 1 1/4 teaspoons chili powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon ground red pepper
  • 8 ears corn, husked

Make It

1. Stir together butter, lime juice, chili powder, salt and red pepper in a small bowl until smooth and thoroughly combined. Generously coat corn with butter. Wrap each ear in foil and tighten securely.

2. Roast in 450 degrees F oven for 45 minutes, or grill over medium-hot coals until tender, 15 to 20 minutes, turning occasionally.
