Fluffy Carrot Couscous

Ingredients

  • 1 chopped carrot
  • 1 chopped scallion
  • 1 teaspoon canola oil
  • 1 teaspoon chopped mint
  • 2 1/2 tablespoons couscous
  • 1/4 cup water
  • Salt, to taste
  • Black pepper, to taste
  • Lemon juice, to taste

Make It

1. Saute carrot and scallion in nonstick skillet with oil for 4 minutes. Add mint and cook 1 minute longer. Stir in couscous and water; add salt, pepper, lemon juice to taste. Remove from heat, let stand 5 minutes and fluff with fork.
