Fiesta Corn

Make your own Mexi-corn with this recipe. Just mix together sweet peppers, corn, and seasonings.

Fiesta Corn
Servings: 4 to 6


  • 3/4 cup each chopped red and green bell peppers
  • 1 tablespoon canola oil
  • 1 1/2 cups frozen corn
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1 tablespoon fresh cilantro

Make It

1. Saute red and green bell peppers in canola oil on medium heat for 3 minutes. Add frozen corn and cook 2 minutes more. Stir in chili powder, salt, and fresh cilantro.
