Heat oven to 400°F. Lightly spray a wire rack with vegetable cooking spray, and place inside baking pan. Dredge eggplant slices with egg white in shallow bowl; sprinkle with breadcrumbs, and press firmly to cover. Spray both sides of slices with vegetable cooking spray, and place on rack. Bake until lightly brown, about 15 minutes.
Top each eggplant slice with marinara sauce and mozzarella cheese. Place back in oven and bake until marinara is hot and cheese is melted, about 10 minutes. Garnish with basil, if desired.
