- 1 medium zucchini, cut into 3 x 1/2-inch sticks
- 1/2 cup plain low-fat yogurt
1. Heat oven to 425 degrees F. Spray a baking sheet with oil. Mix cornflake crumbs and salt.
2. Coat zucchini sticks with yogurt. Press into crumb mixture a few at a time. Arrange on baking sheet. Bake 15 minutes, until golden brown and tender.
