Ingredients

  • 4 pounds Yukon Gold potatoes, peeled and cubed
  • 1/2 cup (1 stick) unsalted butter, cut into pieces
  • 1 1/4 cups half-and-half
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Make It

1. Boil potatoes in salted boiling water until they are knife-tender, about 25 minutes.

2. In small saucepan, heat together butter and half-and-half until melted.

3. Drain potatoes; return to pot. Dry over high heat, about 1 minute. Mash potatoes while adding half-and-half mixture, salt and pepper.
