Buffalo Spuds

  • 2 pounds russet potatoes, scrubbed and with skins
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons mild hot-pepper sauce
  • Salt, to taste

Make It

1. Heat oven to 425 degrees F. Cut each potato lengthwise into 8 to 10 wedges.

2. Toss potatoes wedges with 1 tablespoon of the melted butter in large roasting pan. Season potatoes to taste with salt.

3. Roast in 425 degrees F oven for 1 hour, turning potatoes over with spatula every 20 minutes.

4. Heat together remaining 1 tablespoon melted butter and hot sauce in small saucepan. Toss with potatoes in roasting pan. Transfer to serving bowl.
