Brown-Rice Burgers

Brown-Rice Burgers

Ingredients

  • 4 pounds lean ground beef
  • 2 onions, chopped
  • 1 1/2 cups loosely packed parsley, chopped
  • 1/4 cup Worcestershire sauce
  • 2 teaspoons dried basil
  • 2 teaspoons dried marjoram
  • 2 teaspoons salt
  • 1/3 teaspoon ground black pepper
  • 1 cup cooked quick brown rice
  • 4 hard rolls, split
  • 4 slices Swiss cheese
  • 1 tomato, sliced

Make It

1. Combine beef, onion, parsely, Worcestershire, basil, marjoram, salt and pepper in large bowl.

2. Remove one-fourth of the mixture to bowl. Mix in cooked rice. Shape into 4 equal patties; divide remaining meat mixture into patties. Freeze for up to 3 months.

3. Broil patties 3 inches from heat for about 14 minutes, turning over halfway through cooking. Serve on roll with cheese and tomato.

Mushroom Sauce

Servings: 4 Yield: 1-1/2 cups

Ingredients

  • 1 tablespoon butter
  • 8 ounces sliced mushrooms
  • 1 cup sliced onion
  • 1 cup beef broth
  • 1 tablespoon flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Make It

1. Heat butter in nonstick skillet over medium heat. Add mushrooms, onion; saute 8 minutes or until softened and mushrooms have released their juices. Combine beef broth and flour in small jar with tight-fitting lid. Stir into skillet; cook, stirring, 2 minutes or until thickened. Season with salt and pepper. Spoon over broiled beef patties from above. Makes 4 servings sauce (1-1/2 cups).
