Bean & Onion Saute

  • 2 pounds mixed green, yellow and purple beans, trimmed
  • 1/4 pound prosciutto, chopped
  • 1 tablespoon olive oil
  • 2 medium-size onions, halved and thinly sliced
  • 1/4 teaspoon black pepper

Make It

1. Cook beans in boiling water 4 minutes or until crisp-tender. Drain.

2. Heat large skillet over medium-high heat; add prosciutto; saute 3 minutes. Remove, set aside.

3. Reduce heat to medium-low; heat olive oil. Add onions,. Cook 5 minutes, stirring occasionally, until light golden. Add beans, prosciutto and black pepper to pan. Heat through.
