In large skillet, heat oil over medium heat. Add onion and pepper; cook 3 to 5 minutes, or until softened. Stir in garlic; cook 1 minute. Add sausage; cook 5 to 7 minutes, or until sausage is cooked through, stirring occasionally.
Heat oven to 425°F. Coat baking sheet with cooking spray. Unroll pizza-crust dough onto cutting board, and cut into four squares. Pat each square into a 6 x 5-inch rectangle. Place on baking sheet. Spread each rectangle with 2 tablespoons ricotta cheese. Divide vegetable-sausage mixture among rectangles. Sprinkle each with 1 tablespoon mozzarella and 1/2 tablespoon Parmesan cheese.
Bring 2 opposite corners of each rectangle of dough over center of filling and pinch together, then bring remaining 2 corners of dough over filling, pinching all corners together, forming a bundle. Repeat with remaining rectangles. Bake in prepared oven about 15 minutes.
