1. Combine zucchini, onion, turkey, salt, pepper and parsley if using, in bowl. Form into 4 equal patties.
2. Coat large nonstick skillet with nonstick cooking spray; heat over medium heat. Add burgers to skillet; cook 3 to 4 minutes per side or until no longer pink in center. Or, heat broiler; broil 6 minutes per side. Serve on hard rolls. Makes 4 burgers.
