Combine turkey, peach, red pepper and green onion in medium-size bowl.
Combine yogurt, mint, ginger, salt if using, and black pepper in small food processor or blender. Whirl until well mixed. Pour the yogurt mixture over turkey mixture; toss to combine.
Slice pitas in half, forming 2 pockets for each. Stuff halves with turkey salad mixture and lettuce, dividing mixture equally. Makes 6 servings.
