  • 1 pound smoked turkey breast, in one or two 1/2-inch-thick slices, cut ito small dice
  • 3 ripe peaches, peeled, pitted and diced
  • 1 small sweet red pepper, in small dice
  • 6 green onions, finely chopped
  • 1 container (8 ounces) low-fat plain yogurt
  • 3 tablespoons chopped fresh mint
  • 1 tablespoon grated fresh ginger
  • 1/2 teaspoon salt (optional)
  • 1/2 teaspoon ground black pepper
  • 6 pita breads (regular size)
  • 2 cups shredded romaine lettuce

Make It

1. Combine turkey, peach, red pepper and green onion in medium-size bowl.

2. Combine yogurt, mint, ginger, salt if using, and black pepper in small food processor or blender. Whirl until well mixed. Pour the yogurt mixture over turkey mixture; toss to combine.

3. Slice pitas in half, forming 2 pockets for each. Stuff halves with turkey salad mixture and lettuce, dividing mixture equally. Makes 6 servings.
