Give leftover turkey a second chance by adding an assortment of your favorite fresh vegetables to eggs and smoked Gouda cheese for a quick and easy frittata recipe.
1. Heat oven to 325 degree F. Spray a 10-inch oven-safe nonstick skillet with nonstick cooking spray. Add olive oil to skillet and heat over medium heat. Add vegetables and cook 7 minutes, until tender.
2. In a large bowl, whisk together the eggs, milk, salt and pepper. Stir in turkey and 1/2 cup of the Gouda.
3. Pour egg mixture into skillet. Cook over medium-high heat for 5 minutes, stirring gently halfway through cooking. Sprinkle remaining 1/2 cup cheese over top of mixture, and transfer skillet to oven. Bake at 325 degree F for 20 minutes. To serve, gently slide onto plate and cut into 4 servings. Garnish with parsley.
