Ground Turkey Stroganoff

Served over noodles, saucy stroganoff is great weeknight meal. Instead of the traditional beef strips, this stroganoff recipe is made with ground turkey.

Ground Turkey Stroganoff

  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 1 1/4 pounds ground turkey
  • 1 package (8 ounces) sliced mushrooms
  • 1 large sweet red pepper, cored, seeded and chopped
  • 1 can (14.75 ounces) chicken broth
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 pound egg noodles
  • 1/4 cup flat-leaf parsley, chopped

Make It

1. In large nonstick skillet, heat oil over medium-high heat. Add onion; saute 5 minutes. Add turkey, breaking it up into pieces, then mushrooms and red pepper; saute until turkey is no longer pink, 10 minutes.

2. In medium-size bowl, whisk together broth, flour, salt, paprika, thyme and pepper. Add to skillet, stirring to combine. Bring to simmering; simmer 3 minutes, stirring occasionally, until thickened.

3. Reduce heat to low. Stir in sour cream and mustard. Heat gently for 1 to 2 minutes until just heated through; do not let boil.

4. Meanwhile, in large pot of boiling water, cook noodles following package directions. Drain. Stir parsley into turkey mixture. Serve over noodles.
