Black Bean Chili

Black Bean Chili

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 1 sweet green pepper, diced
  • 1 clove garlic, finely chopped
  • 1/2 pound ground turkey
  • 1/4 cup chili powder
  • 1 tablespoon ground cumin
  • 3/4 teaspoon salt
  • 1/2 ounce ground allspice
  • 1 16 ounce can stewed tomatoes
  • 1 cup water
  • 3 cups diced zucchini (3/4 pound)
  • 1 19 ounce can black beans, drained and rinsed
  • 1 4 ounce can chopped green chiles
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup chopped green onion

Make It

1. Heat oil in large skillet over medium-low heat. Add onion, green pepper and garlic; saute until softened, 8 minutes. Add ground turkey; saute, breaking up meat with wooden spoon, for 4 minutes or until no longer pink.

2. Stir in chili powder, cumin, salt and allspice; saute 1 minute. Add tomatoes and water; simmer for 7 minutes.

3. Stir in zucchini, beans and green chilies; simmer, stirring occasionally, until zucchini is tender, 10 minutes.

4. Transfer to serving dish. Sprinkle cheese and green onion over top.
