All Wrapped Up Chef Salad

Ingredients

  • 1 cup Thousand Island dressing
  • 2 tablespoons chopped, bottled, pickled jalapeno peppers
  • 4 burrito-size flour tortillas
  • 3 cups torn romaine lettuce
  • 1/2 pound sliced deli roast beef
  • 1/2 pound sliced deli turkey breast
  • 1 medium tomato, thinly sliced
  • 1 avocado, pitted, peeled, sliced
  • 1/2 seedless cucumber, thinly sliced
  • 1 cup shredded pepper-Jack cheese

Make It

1. In cup, mix dressing, jalapeno. Spread 2 tablespoons over each tortilla. Scatter romaine over each.

2. Layer beef, turkey, tomato, avocado, cucumber on each tortilla. Sprinkle 1/4 cup cheese over each. Tightly roll up each tortilla. Wrap in damp paper toweling; refrigerate at least 30 minutes or up to 1 hour.

3. Remove toweling. Halve each diagonally. Serve dressing on side.
