  • 4 skin-on turkey thighs, boneless or deboned
  • 2 cloves garlic, chopped
  • 2 tablespoons thyme
  • 1 tablespoon olive oil

Make It

1. Heat the oven to 350 degrees . Place the turkey skin-side down on a cutting board and season with salt, pepper, garlic, and thyme.

2. Beginning at an end, roll a thigh lengthwise into a cylinder. Tie it firmly every two inches with kitchen twine. Season the skin with salt and pepper. Repeat with the other thighs.

3. Heat the oil in a large nonstick, oven-safe skillet over medium heat. Sear the turkey until lightly browned on all sides, about 3 to 4 minutes.

4. Bake the thighs until they're no longer pink on the inside, about 20 minutes. Let the meat cool, remove the twine, and cut the turkey into 1/2-inch slices.
