1. Preheat the oven to 400 degrees F. Line two baking sheets with foil. Place remaining cannellini beans from Thursday in a medium bowl. Mash with a fork. Stir in 1/4 cup marinara sauce and 1/2 cup shredded mozzarella cheese. Divide the bean mixture between two 10-inch tortillas. Top each with a second tortilla. (You need four tortillas total.) Place on prepared sheets. Top each "pizza" with 1/4 cup marinara sauce, 1/4 cup cheese, and 1 oz. pepperoni. Bake for 10 minutes, or until heated through. Meanwhile, place a steamer basket in a medium pot over 1 inch of water. Bring to a boil. Add 6 cups broccoli florets (12 oz.), cover, and steam until tender, about 6 minutes. Transfer to a plate and drizzle with 1 Tbs. olive oil and sprinkle with 1/4 tsp. salt. Cut pizzas into wedges and serve with broccoli.
