1. Cook chopped bacon in a skillet until crisp, about 9 minutes. Transfer to a plate. Leaving 2 Tbs. drippings in the skillet, cook yellow onion for 3 minutes. Add cherry tomatoes, balsamic vinegar, and maple syrup and cook, stirring occasionally, 12 to 15 minutes. Transfer to a food processor and pulse 10 times. Transfer to a bowl and stir in the cooked bacon.
