In a small bowl stir together the ingredients for the peanut sauce. Set aside.
In a medium bowl combine the ingredients for the mango salsa. Set aside.
In a large bowl combine the turkey, scallions, cilantro, and 2 tablespoons of the reserved peanut sauce. Shape into 4 even patties, about 1/2-inch thick. Lightly coat both sides of burgers with cooking spray.
Heat grill to medium-high. Grill the patties until cooked through (165°F), about 5 minutes per side.
Serve the burgers on buns with mango salsa and remaining peanut sauce.
