Thai Turkey Burgers

Ingredients

Peanut Sauce
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon rice vinegar
  • 1 tablespoon reduced-sodium soy sauce
  • 1 1/2 teaspoons grated fresh ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon honey
Mango Salsa
  • 1 ripe mango, peeled, seeded, and cubed
  • 1/4 cup chopped red bell pepper
  • 2 tablespoons lime juice
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon chopped fresh basil
  • 2 teaspoons olive oil
  • Salt & pepper to taste
Burgers
  • 1 pound 93% lean ground turkey
  • 2 tablespoons sliced scallions
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons Peanut sauce recipe
  • Nonstick cooking spray
  • 4 hamburger buns, split and toasted

Make It

Peanut Sauce

1. In a small bowl stir together the ingredients for the peanut sauce. Set aside.

Mango Salsa

2. In a medium bowl combine the ingredients for the mango salsa. Set aside.

Burgers

3. In a large bowl combine the turkey, scallions, cilantro, and 2 tablespoons of the reserved peanut sauce. Shape into 4 even patties, about 1/2-inch thick. Lightly coat both sides of burgers with cooking spray.

4. Heat grill to medium-high. Grill the patties until cooked through (165 degrees F), about 5 minutes per side.

5. Serve the burgers on buns with mango salsa and remaining peanut sauce.
