Heat the oven to 425°. Clean enough sweet potatoes to feed your crowd, then prick them all over with a fork. Place them
on a foil-lined baking sheet and bake them until they're very soft, 1 to 1 1/2 hours.
Split the potatoes, then serve them with butter, sour cream, or Greek yogurt, and a dizzying array of other toppings in little bowls.
