Make It:
  • Heat the oven to 325°F. and oil a 9x5-inch loaf pan.

  • In a large bowl, combine the butter and sugars. Mix in the beaten eggs and mashed sweet potatoes and blend until smooth.

  • In a smaller bowl, combine the flours, salt, baking soda, and spices. Add the dry ingredients to the sweet potato mixture in two steps, alternating with the hot water. Pour the batter into the prepared loaf pan and bake in the center of the oven for 1 hour 10 minutes, or until a toothpick inserted in the center of the bread comes out clean. Let cool completely in pan before removing.
