  • Coat slow cooker with
    nonstick cooking spray.

  • Place onion and garlic in
    bottom of slow cooker. Season
    beef with 1/2 tsp of the salt, the
    cinnamon and cayenne; place
    over onion. Scatter sweet
    potatoes and fruit bits over
    top; add tomatoes and 1 cup of
    the broth.

  • Cover and cook on HIGH for
    6 hours or LOW for 8 hours.

  • Pour liquid from slow cooker
    into a small saucepan and
    bring to simmer. Dissolve
    cornstarch in remaining
    1/4 cup broth and stir into
    saucepan. Simmer for 2
    minutes, until thickened. Add
    remaining 1/2 tsp salt and stir
    mixture back into slow cooker.

  • Serve stew with cooked
    couscous and sprinkle each
    serving with peanuts.

For easy cleanup:

Line your slow cooker with a disposable slow cooker liner. Add ingredients as directed in recipe. Once your dish is finished cooking, spoon the food out of your slow cooker and simply dispose of the liner. Do not lift or transport the disposable liner with food inside.
