Curried Chickpea Stew

Ingredients

  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, chopped
  • 1 sweet red pepper, diced
  • 1 sweet green pepper, diced
  • 2 potatoes, peeled and diced
  • 1 tablespoon curry powder
  • 1 can (13-3/4 ounces) chicken broth plus water to make 2 cups
  • 1 can (16 ounces) chickpeas, rinsed and drained
  • 1 can (16 ounces) whole tomatoes
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup golden raisins
  • 1/2 cup dry-roasted peanuts

Make It

1. Cook onion in oil in large saucepan, stirring, 5 minutes. Add garlic, peppers and potatoes; cook 3 minutes. Stir in curry; cook 1 minute. Add broth, chickpeas, tomato, salt and pepper; cook, uncovered, 15 minutes or until potatoes are tender.

2. Stir in raisins and peanuts. Serve over rice if desired.
