Ingredients

  • 1 3/4 cups whole wheat flour
  • 1/3 cup wheat germ
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup vegetable oil
Spinach Feta
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/3 cup oil
  • 3/4 cup crumbled feta cheese
  • 1/2 cup thawed frozen spinach (squeezed dry)
  • 2 tablespoons chopped dill

1. Heat oven to 350 degrees . Line a 9 x 5 x 3-inch loaf pan with nonstick foil. Set aside. In a medium bowl, whisk flour, wheat germ, baking powder and salt. In a large bowl, whisk eggs and oil. Add other ingredients as directed below.

Spinach Feta

2. Add 1/2 tsp salt to dry ingredients. Add 1 cup milk and 1/3 cup oil to wet ingredients. Once blended, fold in 3/4 cup crumbled feta cheese, 1/2 cup thawed frozen spinach (squeezed dry) and 2 tbsp chopped dill. Transfer to prepared pan and bake at 350 degrees for 55 to 58 minutes.
