In a large pot, brown ground beef over medium-high heat. Chop garlic, onion, and green pepper. Add them to the pot and cook until softened. Stir in chili powder, crushed tomatoes, chicken stock, kidney beans, and pinto beans.
From a can of chipotle in adobo, add a chopped chili and a tablespoon of sauce. Cook the chili for 30 minutes on medium-low, stirring occasionally, until thickened. Serve it with toppings, such as shredded cheese, sliced scallions, and diced tomato, and corn on the side.
