  • Preheat oven to 375°F. Line two baking sheets with parchment paper.

  • Roll one piece of puff pastry sheet into a 12 x 18-inch rectangle. Sprinkle the bottom half with 1 1/2 tsp. apple pie spice and 3 Tbs. of sparkling sugar. Fold the top half of the pastry over the bottom half and press with the rolling pin to seal. Sprinkle with another 3 Tbs. sparkling sugar. Cut off the folded edge and discard. Repeat process with the second piece of puff pastry.

  • Using a pizza cutter or sharp knife, cut each puff pastry sheet vertically into eight strips. Then cut in half horizontally to make 32 strips. Transfer each strip to the prepared sheets. Gently stretch and twist each strip spacing them 1 inch apart on the sheets.

  • Bake strips in batches, about 17 minutes or until the pastry is puffed and golden brown. Cool completely.
