Vegetable Soup

Ingredients

  • 4 cups chicken broth
  • 2 cups water
  • 4 cups diced tomato
  • 1 cup each diced carrot, white turnip, onion, celery, potato
  • 1/3 cup chopped sweet pepper, red or green
  • 3 cloves garlic, finely chopped
  • 1/3 cup chopped fresh parsley
  • 1/3 cup uncooked pearl barley
  • 1 bay leaf
  • 2 teaspoons chopped fresh basil
  • 1/4 teaspoon cayenne pepper
  • 2 teaspoons chopped fresh oregano
  • Salt, to taste
  • 1 1/2 cups cut-up green beans
  • 1 cup corn kernels

Make It

1. Combine broth, water, tomato, carrot, turnip, onion, celery, potato, sweet pepper, garlic, parsley, barley, bay leaf, basil, cayenne, oregano and salt in large pot. Simmer 25 minutes, stirring occasionally.

2. Add beans and corn. Simmer 20 minutes longer or until beans are tender. Remove bay leaf. Serve with crackers, corn bread or Whole-Wheat Biscuits (www.familycircle.com). Makes 9 servings.
